Upmav - Kerala style

INGREDIENTS

Roasted semolina (sooji / rava) : 1 cup,

Onion (chopped finely) : 1 medium sized,

Green chilly chopped : 1 or 2,

Bengal gram (split and skinned) : 1 tbsp

Ginger (chopped finely) : ½ inch

Cumin seeds : ½ tsp,

Curry leaves : 2 sprigs

Cashew nuts : 10 nos

Mustard seeds :1 tsp

Oil / Ghee : 2 tbsp,

Water : 1 cup

Upmav is a nutritious and delicious breakfast recipe and is very popular in southern India. It's also one of the easiest things to prepare for breakfast. It doesn't take a lot of time and the upma preparation can be completed in 15-20 minutes if you're ready for the roasted semolina. Instruction for Upma Recipe

  • Heat ghee or oil in a pan.
  • Add the mustard seeds and when they start crackling, add the cumin and the urad & chana dal.
  • Fry till they're a little brown.
  • Add the cashews and onions.
  • Fry until the onions are clear.
  • Add the chilly greens, the curry leaves and the ginger and fry them for a minute.
  • Connect water to this mixture and let it boil.
  • Add salt and as the water boils, lower the flame and add semolina*.
  • If the mixture looks dry, you should add more water.
  • Reduce the flame and simmer the upma for 2-3 minutes.
  • Remember to keep stirring at each level so that the upma doesn't stick to the pan.
  • Garnish with vegetables, coriander and cilantro leaves.
  • Serve yourself hot.

Tips:

  • When you add semolina (step 8), keep stirring. Semolina should also be added in small quantities with a constant stirring spoon to prevent lump forming
  • You should add some lemon juice to give the upma a different taste.
  • You should add finely chopped ginger, carrots and onions.
  • Hold the roasted semolina in an airtight jar. This way, the semolina stays well for a longer time and does not get moldy or spoiled.
